Day after Thanksgiving Recipes

It's that time of year where we're scrambling to put together our Thanksgiving Day recipes. But have you planned what to do with your Thanksgiving leftovers? And I know the last thing we want to eat the day after Thanksgiving is more turkey and stuffing, but what if you could eat them in a whole new way? Here are recipe's that the team whip up with their own thanksgiving leftovers that are quick and easy, but most importantly delicious!
Angela’s Turkey & Cranberry Sandwich
INGREDIENTS
4 slice rye bread
4 tbsp. cranberry sauce
4 oz. sliced turkey
2 oz. Brie
4 piece Crisp bacon
1/2 c. baby spinach
DIRECTIONS
Place rye bread on a broiler-proof baking sheet. Top 2 slices with cranberry sauce, sliced turkey, and Brie.
Broil until the cheese melts, about 1 minute. Top the cheese with crisp bacon and baby spinach. Sandwich with the remaining bread slices.
Katrina’s Cranberry Turnover
INGREDIENTS
8 oz. cream cheese
2 egg yolks
1 cup. confectioners’ sugar
1 package Puff Pastry
3/4 c. leftover cranberry sauce
DIRECTIONS
Preheat the oven to 400 degrees Fahrenheit. 2 to 3 minutes on low speed with an electric mixer, beat cream cheese in a mixing bowl, with egg yolks, and 1 cup confectioners' sugar in a medium until smooth.
1 puff pastry sheet should be rolled out into a 10-inch square. Using a 5-inch square cutter, cut the cake into four 5-inch squares. In the middle, place 2 tbsp of the cream cheese mixture. 1 1/2 tbsp cranberry sauce on top of each. Wet the edges of each square and fold them over to make a triangle. Place the turnovers on a baking sheet lined with parchment paper. Repeat until you've used up all your ingredients.
Bake turnovers for about 20 minutes. Transfer turnovers to a wire rack to cool for 10 minutes.
Shannon’s Leftover Tacos
INGREDIENTS
flour tortillas
Turkey, shredded
Cranberry sauce
Stuffing or dressing
Sweet or mashed potatoes
Any leftovers you have
DIRECTIONS
If you have a gas stove, carefully turn the burner on medium-high then place the tortilla shell directly onto the burner. Flip after 10-12 seconds with metal tongs and toast the other side. If you don't have a gas stove, you can try this under a boiler but keep an eye out!
Once tortillas are all toasted, start layering your taco however you want!
